Chocolate Chip Banana Bread Pudding

 

4 eggs

2 c. milk

1 c. white sugar

1 T. vanilla extract

4 c. cubed French bread

2 ripe bananas, sliced

1 c. semisweet chocolate chips

Preheat oven to 350 degrees.  Grease a 9 x 5” loaf pan. In a large mixing bowl, combine eggs, milk, sugar and vanilla until smooth.  Stir in bread, bananas and chocolate chips and let rest 5 min. for bread to soak. Pour into prepared pan.  Line a roasting pan with a damp kitchen towel.  Place loaf pan on towel, inside roasting pan, and place roasting pan on oven rack.  Fill roasting pan with water to reach halfway up the sides of the loaf pan.  Bake 1 hour. 

(Double this recipe for a 9” x 13” x 2” pan.  Water bath is not needed.)

Roasted Banana Butterscotch Sauce

3 T. butter or margarine

6 ripe bananas, sliced

½ c. brown sugar

2 jars butterscotch ice cream sauce

Saute banana slices in butter.  Stir in brown sugar.  Add butterscotch sauce and heat gently.  Serve over bread pudding.  Decorate each serving with a banana slice and chocolate chip.  Serve with ice cream or whipped cream.
